NOTE: You can only make the hand load ammo types if you've gotten the level 6 perk Hand Loader. For the .44 Magnum hand load ammo, you can get the schematics by doing the "Jules' Own .44 Hand Load Recipe" Zone 1 undocumented quest, which allows you to make that type of ammo without the Hand Loader perk.
