Which conversation choice should I pick?
For the most part, pick whatever you like. As the docs say, the game won't let you miss anything vital. However, there are some plot points it apparently doesn't consider vital that are easily missed if you pick the wrong thing.
It's not always easy to tell what the one-word choices are going to have you say, and sometimes you'll find you've just picked something for the other guy to say. I'll let you know when it makes a big difference which one you pick.
