1 of 4: Yep, and unfortunately, there's really no easy way to beat them.
2 of 4: Just keep on using the strategies that have served you the best throughout the game to kill them.
3 of 4: It also helps a lot to have a Mage or two (or a Priest) with Dispel Magic memorized to quickly negate the confusion the Umber Hulks can cause.
4 of 4: Don't bother taking the Umber Hulk's shells, since they're both useless and heavy.
