2 of 5: In the large hangar where you're dueling with Dooku, look along the right wall for a device with two targets.
3 of 5: Shoot both targets very quickly to open the central canister case.
4 of 5: This is harder than it sounds; you have to get the second one while the first one is still moving.
5 of 5: The best character for this one is Jango Fett; when flying, he shoots very fast and is quite maneuverable. Everyone else moves too darn slowly.
