How do I defeat these immensely tough crystal monsters?
1 of 2: By being immensely tougher.
2 of 2: The main thing you need to do besides have lots of hit points and good resistances (enhanced with Day of Protection) is to cast Protection from Magic. It'll keep you from being paralyzed by the humanoid crystal guys.
