Might and Magic VIII: Day of the Destroyer Hints
What are promotion quests?
1 of 5: They're quests that get your characters promoted.
2 of 5: Clerics become Priests of the Sun, Knights become Champions, etc.
3 of 5: These quests aren't technically essential to finishing the main line quests, but they really are necessary anyway to get your characters properly built up.
4 of 5: Promotions mean more hit points and spell points, plus the ability to go further in already-learned skills.
5 of 5: They also mean experience points, even for those not of the class being promoted. That means you should complete every single promo quest, even the ones that don't actually promote anyone in your favorite party of five (but especially the ones that do).
