If you like first-person shooters, you're not even going to ask this question; you'll go for the hardest level first time around. (They don't mention this in the docs, but in Hard the demons will regenerate. You probably ought to do most of the game at a trot.)
If you tend to trip over your own feet and drop your keys in the parking lot, like me, go for Beginner. Most bad guys go down with one shot, there are fewer of them, and their attacks aren't too damaging. It's not God mode, but it's close. Easy is similar, but more of a challenge; the bad guys take two shots instead of one and their attacks are much more damaging.
