Which piece should I exchange?
1 of 3: That depends on which one you most want to improve the effect on.
2 of 3: None of the new armor pieces have new or different effects. It'll be the same effect as the old piece, except stronger. For instance, the standard boots improve pickpocketing success rates by 15%, and the new boots improve it by 25%.
3 of 3: Note that you'll probably want to get the new armor or hood, since they have enchantments on them that aren't usually on chest pieces or headgear (and can't be put on them via enchanting).
