Where can I find help on the right thing to say to someone?
Not all conversations are all that important. A lot of times (especially when you're in friendly territory), conversations are simply for atmosphere. When I was aware that there were wrong ends to a conversation (one that could get you killed, for example) or if the situation felt dangerous, I covered the conversation in hints. Otherwise, I left it out of the file.
