1 of 3: If you won a fist fight against Burton (Vernon Roche's path) or Silgrat (the Scoia'tael path) in Chapter 2, you'll be able to get a rematch in this chapter.
2 of 3: You'll find the guy in the room with the first four dice poker players. (See the "Poker Face: Loc Muinne" side quest.)
3 of 3: Beat him in one more fist fight to defeat him for good.
